Potato Latkes                                                   Tracy

 

Hanukkah, the Feast of Dedication.  It is a wonderful time of year. 
It also is a reminder to us as God’s children to dedicate, or re-dedicate ourselves to him. 
This dish is a favorite from my husband, Stephen’s childhood- memories of this festive holiday he celebrated as a boy.

 

2 large eggs

3 cups potatoes, grated & drained

4 Tablespoons sweet onion, grated

¼ teaspoon fresh ground pepper

2 Tablespoons matzah meal (or more as needed for consistency)

½ cup olive oil or butter

Salt to taste

 

Beat the eggs and then add the grated potatoes, onion, salt, pepper, and the matzah meal. 
Heat about half of the olive oil or butter in a frying pan, and then drop the potato mixture by tablespoon, into the hot oil.
Fry until browned on both sides. 
Keep the Latkes hot until all are fried and cooked. 
Add more oil or butter into the pan as needed for frying. 
Serve with fresh applesauce or sour cream.  Serves 8.
